Hello, from Nikita at La Cocina Encantada! Thank you for stopping by. See this post for the meaning behind La Cocina Encantada. I live, work, study, and of course cook in Portland. I find nature continuously inspiring and love verdant pacific northwest for its lush and wild charm. I love cooking, baking, drawing, painting, photography, almost anything crafty, running, yoga, and spending time with people I care about. I am a 23 year old nursing student, CNA, Certified 200 level yoga instructor, wife, and aspiring domestic goddess. I believe in eating real food: minimally processed, no weird additives, heavy on the fresh produce and whole grains. I also believe in eating delicious food. I love experimenting with different types of ethnic food, gluten free food, vegan food, raw food, and herbs and spices of all kinds. (Note: While I like trying these things out, the only diet I adhere to is vegetarianism. ) Healthy food should be creative, inspiring, and yes taste good! While I strive to make healthful recipes, I never sacrifice taste for "low cal" or "low fat." Everything in moderation is key! I hope to share some of my recipes and thoughts on food or heath issues here.
I also try to balance my love of food with plenty of activity! Being active for me stemmed from wanting to get in shape, but I have found it to be important for so much more than that. It clears my mind, releases endorphins, and gives me more energy for my day to day activities. My favorite activities are yoga and running, but I also enjoy hiking, swimming, biking to work, lifting weights, and attending occasional classes at my gym.
